Description

François Carillon, heir to a Burgundian dynasty dating back to the 16th century, makes this wine on a plot located north of Chassagne Montrachet, on the border with Puligny. Les Macherelles is a climat of calcareous, loamy and stony soils, similar to those of Les Perrières, which brings an incisive minerality and a very marked tension. The vines, young but well adapted (15 years), are cultivated with meticulous respect for the vineyard. In one of the first vintages, François decided to discard a significant part of the harvest so as not to compromise the purity of the wine, making it clear that the terroir has the last word. The wine is made exclusively from Chardonnay, the queen variety of the Côte de Beaune.

Winemaking

The grapes are harvested by hand and pressed whole to preserve their freshness. The fermentation of François Carillon Chassagne Montrachet 1er Cru Les Macherelles takes place in French oak barrels, with a moderate use of new wood (about 20%), aiming at complexity without opacity. During the ageing, from 12 to 18 months, a subtle bâtonnage is practised. The wine is bottled with minimal intervention, without aggressive filtering, to keep the energy of the vineyard intact.

Taste

On the nose, François Carillon Chassagne Montrachet 1er Cru Les Macherelles offers a precise profile: white fruit (pear, golden apple), fresh citrus and notes of wet stone and sea salt. The oak adds a very subtle background of brioche and hazelnut. The palate is vibrant and taut, with a dense texture, firm acidity and a saline character running through the palate. The finish is long, dry, with echoes of candied lemon, stone fruit and lingering minerality. An elegant wine, with an athletic structure and marked personality, ideal for pairing with crustaceans, oily fish or poultry with creamy sauces.
