Description

François Carillon, renowned for his meticulous work at Puligny-Montrachet, faced a crucial challenge in 2021: the loss of a large part of his harvest due to spring frosts. Far from giving up, he opted for a bold and elegant solution: to vinify Chardonnay from the south of France under his own Burgundian rigour. Thus was born François Carillon La Bergerie Chardonnay, a cuvée made from grapes grown in clay-limestone soils bathed in Mediterranean sunshine, under the appellation "Vin de France". Carillon was not looking for a simple contingency solution, but to translate the character of the South with the refined language of Burgundy. The result is a wine that, although far from its usual origins, retains the winemaker's soul: precision, balance and purity.

Winemaking

The grapes used to make François Carillon La Bergerie Chardonnay are vinified entirely in the Puligny Montrachet cellars, following the same principles as the great whites of the Côte de Beaune. After gentle pressing, the must ferments in oak barrels, 20% of which are new, which adds complexity without over-fermenting. Ageing lasts 11 months on fine lees, refining the texture and deepening the aromatic nuances. Minimal filtration precedes bottling, respecting the vivacity and authenticity of this southern Chardonnay with a Burgundian spirit.

Taste

On the nose, François Carillon La Bergerie Chardonnay displays aromas of ripe white fruit - pear, golden apple - accompanied by exotic notes of pineapple and a soft floral reminiscence. The palate is fresh and balanced with a creamy entry, vibrant acidity and subtle minerality reminiscent of limestone. The ageing adds a polished texture and echoes of almond and fresh butter. The finish is long, saline and dry, with an aftertaste that combines white fruits and citrus with discretion and elegance. A solar but refined Chardonnay, ideal with baked fish, white poultry or soft cheeses.
