Description
From the heart of Puligny Montrachet, François Carillon - heir to one of the oldest families in the Côte de Beaune - decided, after separating from the family estate in 2010, to shape his own vision: wines that respect the pulse of the terroir without artifice. Although renowned for his whites, François Carillon Bourgogne Rouge shows that his sensibility also finds a voice in Pinot Noir. The grapes come from carefully selected plots in the surrounding communes, where the limestone and clay soils, together with the temperate continental climate, favour a precise, pure and subtle expression of the varietal.
Winemaking
Carillon cultivates with respect, seeking balance rather than power. Each cluster destined for François Carillon Bourgogne Rouge is harvested by hand, completely destemmed and fermented with indigenous yeasts in stainless steel tanks. The extraction process is gentle, preserving freshness and finesse. The wine is aged for 12 months in French oak barrels, with only a small percentage of new wood, allowing the fruit and minerality to speak clearly. After a brief additional ageing in tank, the wine is bottled without fining or aggressive filtration.
Taste
Delicate, restrained and subtle. This is François Carillon Bourgogne Rouge, a Bourgogne Pinot Noir from Burgundy that does not shout, but leaves its mark. On the nose, it unfolds with fresh raspberry, sour cherry and redcurrant, accompanied by notes of undergrowth, dried petals and a hint of white pepper. On the palate, the texture is fine, almost ethereal, with polished tannins and an acidity that adds nerve and length. The moderate use of oak adds structure without being distracting. There is a background of black tea and damp earth that adds depth, but always with elegance. A wine that honours its origins with humility, and whose beauty lies in its restraint.
