Description
El Escondite del Ardacho Las Paredes is a red wine made by Roberto Oliván, one of the most prominent winemakers of the new generation in Rioja. Known for creating organic and terroir-based wines, Oliván works on the Las Paredes plot, a small vineyard of 0.37 hectares in Rioja Alavesa . This wine is a blend of Garnacha and Tempranillo, the predominant varieties of the region.
Winemaking
The vineyard is located in an area with clay soils, which contributes to the structure and minerality of the wine. The grapes are harvested by hand and ferment spontaneously, without the addition of commercial yeasts. Subsequently, the wine is aged in used foudres for 9 months, which allows a smooth integration of the wood, preserving the freshness of the fruit.
Taste
On the palate, El Escondite del Ardacho Las Paredes stands out for its freshness and balance. Ripe red fruit flavours predominate, accompanied by spicy notes and a subtle hint of liquorice. In addition, hints of coffee and a slight undertone of blood orange add intriguing complexity. Despite its alcohol content of 14%, the alcohol is well integrated, contributing to a silky smooth mouthfeel. Its balanced acidity makes it an ideal wine to accompany high-fat dishes.
