I had the excellent ouillé white 2021 Côtes du Jura Ostrea Virgula at one of the finest restaurants in Jura, Le Comptoir Kokagué, where they do Japanese-inspired cuisine with French ingredients It's located 10 minutes north of Arbois and has one of the finest wine lists from the region. The wines from Cavarodes have been getting more and more precise, delineated, clean, pure and sharp, and this 2021 has to be one of the finest I've yet encountered. It's sharp and precise, with pungent and effervescent acidity, coming from a very challenging and low-yielding vintage where the resulting quality was superb but volumes dismissal. This has detail, elegance and beautiful symmetry. It has 13% alcohol, full development of aromas and flavors and is nicely textured, with terrific balance. It seems to be made for long aging in bottle. Superb!
