Along with the red blend, there's also a 2023 IGP Vin de Pays de Franche-Comté Blanc, a blend of Chardonnay with some Savagnin and Savagnin Rosé from vines outside the limits of Jura on the other side of the Loue River planted with old mixed vines. This shows a different side of vinification and aging, all in used Alsatian foudres. It's lively and complex, with a sense of minerality, tangy, with some Chardonnay character. This should be ready earlier than other whites. For Étienne, 2023 was a good year, a vintage of easy fermentations after the very difficult 2022.

Description
From the intimate gaze of Etienne Thiébaud, the idea of Cavarodes Vin de Pays Franche Comté Blanc was born with an almost poetic urgency: to preserve a unique terroir, crossed by the Loue River, beyond the classic boundaries of Arbois, and to let the land speak through the vines. This winery, based in Cramans in the north of the Jura, was born when Etienne, at the age of just 22, decided to continue the family saga with a bold decision: to organically and biodynamically cultivate old vines on limestone and clay soils of the Kimmeridge, rare in Jura, and to harvest by hand to respect optimum ripeness. Their bond with the land is born of courage: to renounce conventions, not to add sulphites, not to filter or clarify, and to rely on spontaneous fermentations that translate pure authenticity. In this blend, Savagnin and Chardonnay converse elegantly, along with other old varieties that contribute that distinctive regional depth.
Winemaking
On arrival the grapes, carefully selected and hand-picked, are gently pressed without industrial intervention. The must begins its fermentation with indigenous yeasts, in a primordial whisper that respects the essence of the fruit. Etienne then opts for a 12-month long resting period in used foudres (Alsatian or old large-volume casks), without additional topping, which promotes a gentle and slightly oxidative maturity, where the pure minerality of the Jura emerges. Finally, Cavarodes Vin de Pays Franche Comté Blanc is bottled without filtration or fining, and without the addition of sulphites, to preserve the maximum expression of the terroir.
Taste
Cavarodes Vin de Pays de Franche-Comté Blanc seduces with a sensory combination of mineral energy, persistence and serenity. It unfolds aromas of ripe pears, notes of dried herbs and mineral hints, while the palate is spicy, fresh and rounded, with vibrant acidity, pronounced yellow fruits and toasty reminiscences from the barrel.
