The slightly rustic 2023 IGP Vin de Pays de Franche-Comté was produced with grapes from field blends of Pinot Noir, Trousseau and other red varieties, including some ancient ones from centenary vines Étienne bought on the western side of the Loue River and therefore outside the Arbois appellation. This is light and tasty, fruit-driven, clean and balanced, with less complexity than other reds but with a good appeal. The reds are bottled early. This is still a little tannic in the finish, still very young and should benefit from some more time in bottle.

Description
On a small plot of land in the Jura, Étienne Thiébaud founded Domaine des Cavarodes when he was just 27 years old. His vision was clear: to bring back old vines and give a voice to a forgotten terroir. In 2007, he rescued plots planted between 1930 and 1940, many co-planted with rare varieties, some almost extinct, on clay, limestone and grey marble soils. There, in the heart of the Pays de Franche-Comté, he cultivated a radically honest style. His commitment to biodynamic agriculture and winemaking without additives or corrections positioned him as a reference in French natural wine, long before it became a trend.
Cavarodes Vin de Pays de Franche Comté Rouge is born from an unusual blend: Pinot Noir, Trousseau, Poulsard, Gamay, Pinot Meunier and other forgotten varieties such as Argant or Gueuche noir. The result is not just a blend, but a declaration of identity: the genetic diversity of the old vineyard, preserved as a liquid heritage. The continental climate of the Jura gives freshness and the soils provide mineral tension, austerity and structure.
Winemaking
The grapes are harvested by hand and whole bunches are selected and fermented spontaneously without the addition of yeast. Gentle macerations aim for a delicate, almost infused extraction. Cavarodes Vin de Pays Franche Comté Rouge is aged for 12 months in old neutral wood vats. It is not filtered, not clarified and no sulphur is added. Each bottle is literally a raw fermentation of the landscape, without make-up.
Taste
Cavarodes Vin de Pays de Franche Comté Rouge is a wine that speaks softly, but clearly. The nose opens with sour cherry, wild strawberry and a touch of damp undergrowth. With air, earthy notes emerge, leaf litter, dried mushrooms and a faint rusticity reminiscent of natural Burgundy. There is a fresh, vibrant tension, with a clean vegetal background - raffle, green stems, undergrowth infusion.
On the palate, it is agile, juicy, quick but memorable. The fruit is red and lively, without sweetness; there is nerve, marked acidity, light tannin and a slightly spicy finish. Cavarodes Vin de Pays Franche Comté Rouge does not seek power, but energy: it vibrates, stretches, and leaves a saline, earthy, almost crunchy sensation. It is light in body, but deep in intention.
A wine for those who enjoy the beautiful imperfection of the living, the changing, the breathing. Ideal with rustic cuisine, game birds or root vegetable dishes. It is not for everyone. But for those who know how to listen, this wine murmurs the Jura with brutal fidelity.
