Description

In the remote village of Cramans, in the northern Jura, Étienne Thiebaud tends his vines with a devotion that borders on the mystical. He founded Domaine des Cavarodes in the early 2000s, with just one hectare of inherited land and a clear vision: to make natural Jura wines that speak softly but speak the truth. From the outset he chose the most difficult path - uncompromising organic farming, manual practices, spontaneous fermentations - not out of rebellion, but out of loyalty to an idea of wine as an honest expression of the land.

Cavarodes Rouge Plouchar is born precisely from this vision: an unusual blend of Ploussard and Chardonnay, where red and white intertwine in a delicate choreography. The grapes come from plots located in cold, slow-draining soils of grey marl and compact limestone, which give the wine a palpable mineral tension. The continental climate, with harsh winters and short summers, slows down ripening and favours pure, clear aromatic profiles, with a vibrant natural acidity that never gives way.

Winemaking

True to his philosophy of craftsmanship, Étienne carries out a manual destemming on perforated mesh, a traditional method that allows the stems to be separated without breaking the grapes. Fermentation is spontaneous, without the addition of yeast, in neutral fibreglass tanks, where the grapes macerate for two weeks in semi-carbonic, respecting the fruity and ethereal character of Ploussard, while the Chardonnay provides skeleton and firm acidity.

The ageing of Cavarodes Rouge Plouchar lasts ten months in foudres that allow a subtle micro-oxygenation without marking the wine with woody notes. Nothing is clarified, nothing is filtered, and no sulphur is added. Cavarodes Rouge Plouchar is bottled as it is: lively, changing, authentic.

Taste

Cavarodes Rouge Plouchar is a wine that moves gracefully. On the nose, it is reminiscent of wild raspberries, dried rose petal, citrus zest and a faintly earthy, wet leaf-like note. There is some cold smoke, like an autumn breeze through damp trees. On the palate, the wine is light but firm, with very fine tannins and an acidity that holds the whole like a taut rope. The Chardonnay appears in the centre of the mouth, providing volume and a saline, almost chalky echo that lengthens on the finish. It is a wine of texture rather than weight, delicate but serious, a delicious rarity that shuns excess and celebrates the subtle.
