Description
Bonnet Ponson Vignes Dieu Blanc de Blancs is a sparkling white wine made exclusively from Chardonnay under the Champagne appellation.
The grapes come from the "Lesvignes-dieu" plot planted in 1962, from the terroir of Coulommes la Montagne, classified as Premier cru.
The plot has a variety of sandy, clayey, well-drained and shallow soils; presence of pebbles due to the alteration of the calcareous bedrock.
Elaboration
The first fermentation is carried out with indigenous yeasts in stainless steel vats (85%) and oak barrels (15%) and the wine undergoes malolactic conversion. Ageing on lees is extended for 8 months without dosage to preserve the wine's identity and character.
Then comes the second fermentation in bottle with a minimum ageing of six years before release. It is not filtered and has a minimum use of sulphites.

Bonnet Ponson Vignes Dieu Blanc de Blancs is a sparkling wine made under the Champagne appellation with a citrus touch and delicate herbal and mineral aromas. On the palate it reveals a superb balance between roundness and vivacity and a perfectly integrated acidity.

The elaboration of this sparkling white wine follows a delicate winemaking technique and the bottle ageing adds surprising qualities to it.
