Description
Bonnet Ponson Cuvée Perpétuelle Extra Brut 1er Cru is a champagne type wine made from 40% Pinot Noir, 30% Pinot Meunier and 30% Chardonnay classified as Premier Cru.
The grapes come from vineyards at least 35 years old in the villages of Chamery, Vrigny and Coulommes-la-Montagne in France.
Winemaking
The grapes come from various villages. The first fermentation takes place in stainless steel vats (85%) and oak barrels (15%) and the wine undergoes malolactic conversion. Ageing on the lees lasts 8 months before being blended with the reserve wine.
After the second fermentation it is aged in the bottle for a minimum of four years before release. It is unfiltered and has only a small dose of sulphur dioxide (35 mg/l).
Taste
Bonnet Ponson Cuvée Perpétuelle Extra Brut 1er Cru is a champagne-like sparkling wine of fine intensity, delicacy, with a fruity touch. In the mouth it shows a citrus, fruity and floral expression with discreet hints of minerality combined with a pleasant acidity.
