Description

Bonnet Ponson Cuvée Perpétuelle Rosé Extra Brut 1er Cru is a champagne-like wine made from Pinot noir, Meunier, Chardonnay.
The grapes come from a selection of 35 plots from the Chamery, Vrigny and Coulommes-la-Montagne terroirs classified as Premier Cru villages in the Chamery - Montagne region of Reims, France.
These plots have different soil types such as siliceous and calcareous sands, silty soil on calcareous subsoil, calcareous clay soil with fragments of millstone on which the vineyards were planted 35 years ago.

Winemaking

The first fermentation is carried out with indigenous yeasts in stainless steel vats (85%) and oak barrels (15%) and the wine undergoes malolactic conversion. Ageing on lees is extended for 9 months without dosage to preserve the identity and character of the wine.
After the second fermentation in the bottle, the wine is aged for a minimum of four years before release. It is not filtered and has only a small dose of sulphur dioxide (35 mg/l).

Taste

Bonnet Ponson Cuvée Perpétuelle Rosé Extra Brut 1er Cru is a champagne-like wine of fine finesse, with a fruity touch and delicate herbal aromas. On the palate it reveals a superb balance between roundness and vivacity and a perfectly integrated acidity.

A mature and complex champagne

The elaboration of this champagne follows a delicate technique in the elaboration, the ageing in bottle, and the incomparable taste makes the difference between an ordinary champagne and a special one.
In gastronomic terms, it is perfect for a romantic dinner and as an accompaniment to dishes such as fine charcuterie (acorn-fed ham), steamed mussels or a dessert based on red fruits and dark chocolate, smoked meats and sushi.
