Description
Bonnet Ponson Seconde Nature 1er Cru is made from Pinot Noir, Chardonnay and Meunier under the Champagne appellation.
The grapes come from plots in the terroirs of Chamery, a village classified as Premier crue in the Montagne de Reims.
Winemaking
After manual harvesting, the wine is pressed within 4 hours of picking and blended with 7% hillside red champagne. The first fermentation is started with indigenous yeasts in 228 litre old oak barrels on fine lees, the ageing lasts 9 months before bottling.
The second fermentation is carried out in the bottle with a dosage between 0 and 4 g/L. The wine is aged for at least another 24 months in the bottle. This champagne is made entirely without sulphites or additives and is unfiltered.
Taste
Bonnet Ponson Seconde Nature 1er Cru has herbal and spicy notes, fruity and floral aromas. The palate is frank but not aggressive, dominated by great acidity.
