Description

Bonnet Ponson Le Jour champagne is a unique and authentic expression of the organically grown Pinot Meunier grape variety. This wine stands out for being a completely natural product, with no added sulphur and no expedition liqueur, allowing the wine to show its pure and genuine character. Made in the Premier Cru "Le Jour" vineyard in Vrigny, this wine comes from vines planted in 1971 on clay soils over a deeper layer of limestone.

Winemaking

Bonnet Ponson Le Jour is fermented in 228 and 400 litre oak barrels with indigenous yeasts. Malolactic fermentation is completed and the cuvée then rests on fine lees for 9 months. Finally, the wine is bottled and remains in contact with the lees for secondary fermentation and foaming for a minimum of 24 months before disgorgement. The champagne is released on the market without expedition liqueur (sugar) and is classified as Brut Nature.

Taste

Bonnet Ponson Le Jour has a bright straw yellow colour with fine, elegant bubbles. On the nose, it offers aromas of white fruits, wet stone and light citrus notes. On the palate, it opens and expands, with ripe white fruits, spicy tobacco notes and a fine minerality. The finish is long, with a pleasant minerality and salinity. This champagne is ideal with white meats and soft cheeses.
