Description
Vincent Wallard did not come from the world of wine, but came to it as a curious outsider, after years between bars and short films in Normandy. After exploring natural wineries in Argentina and Chile, he founded Cuatro Manos as an ode to natural, unadorned wine. In 2015 he settled in the Loire, where he found in Jacky Ripoche's old vineyards in Le Puy-Notre-Dame the perfect place to make wine in his own way: respecting the soil, the fruit and time. Clay-limestone soils, Atlantic climate and viticulture without chemicals or correctives give birth to Tonton Rouge, a natural red wine, unfiltered, without sulphites, with the soul of the terroir.
Winemaking
Tonton Rouge is made with Cabernet Franc and Cabernet Sauvignon from vines about 40 years old. The vinification starts with a semi-carbonic maceration for 3-4 weeks, followed by an ageing of about 12 months in neutral barrels, without additives. It is bottled without filtration or added sulphites, seeking to capture the aromatic purity and energy of the fruit.
Taste
On the nose, Tonton Rouge displays a blend of black fruit (cassis, cherry, plum) and notes of damp earth and spice. On the palate, it is juicy, vibrant, with present but friendly tannins, supported by a lively acidity that keeps it agile. Notes of ripe raspberry, a touch of herbaceousness, black pepper and a slightly smoky background. It has a rustic and authentic character, without make-up: a natural wine without sulphites that expresses itself as it is, with nerve, with soul. It does not seek to please everyone, but it leaves its mark on those who connect with it.
