Description
Sorte Souto is an exceptional wine made from the Godello variety. This unique plot, known as "Souto dos Santos", was planted in 1979 and is located at an altitude of 710 metres in the western part of Santa Cruz do Bolo. The land is hidden among chestnut trees and receives fewer hours of sunshine per year, which contributes to a high acidity in the grapes. The viticulture used is biodynamic, and the sandy soil, derived from the degradation of granite, gives a distinctive saline character to the wine.
Winemaking
Fermentation is carried out in used barrels, without a vat foot, allowing a natural fermentation stop with a high sugar content. The wine is aged for 6 months in barrels.
Taste
Sorte Souto has a complex, dual flavour profile. On the nose, sweet and floral aromas are perceived, such as chestnut blossom and fennel. On the palate, the wine is voluminous and ample, with a remarkable acidity that balances the initial sweetness. This incisive acidity, together with its saline character, cleanses the palate and counteracts the high sugar content, leaving a refreshing and unique impression.
