The one wine that is different here is the 2021 Sorte Antiga, as it ferments in an open oak vat with skins. They have been lowering the time the wine is in contact with the skins, to around three weeks, and they have been shortening the élevage in well-seasoned and neutral 500-liter French oak barrels that had been used for As Sortes before. In the last few years, there has been a progression of the wines toward more transparency, more definition and purity, letting the soils go through and the process to be less noticeable, even in a style where the process tends to mark the wines. You'd never guess this is a skin-contact white, as it's very subtle and elegant. It keeps the poise and energy of the old vines and has the freshness of the year. This is spectacular, the finest vintage for this wine.

Description
Sorte Antiga is a white wine made from centenary Godello vines, located in the heart of the Bibei Valley, Santa Cruz do Bolo. These vines were planted in 1920 on ungrafted vines with goblet training. The vineyard, facing north and at an altitude of 680 metres, is located on granite soil with an absence of mica, which delays its decomposition and maintains its freshness during the dry season thanks to the dry straw cover.
Winemaking
This wine is made following a traditional method with fermentation for one month in open oak vats and ageing for 12 months in used barrels, maintaining biodynamic viticulture to restore the natural balance of the soil.
Taste
Sorte Antiga has a great texture in the mouth, with a slight reminiscence of fermentation on the skins, although without losing its fruity character. On the nose, the aromas typical of the Godello variety stand out, offering a fruity, tasty and concentrated experience with an exciting acidity. The finish is saline, mineral and long, maintaining the elegance and freshness characteristic of this winery's wines. This wine is recommended to be served between 7 and 10 ºC to fully appreciate its nuances.
