Description
Mas Doix Doix was born in Poboleda as a declaration of loyalty to the Priorat: to listen to the mountain rather than tame it. Valentí and Ramón Llagostera decided to rescue old goblet-trained vineyards, accepting an unromantic but essential truth: if the vine commands, the wine excites. Here, on impossible slopes of llicorella (Palaeozoic laminated slate), each vine delivers just the bare essentials, like a handful of concentrated grapes that taste of hot stone and cool night. The Mediterranean climate with a continental tendency stretches the days and cools the early mornings, fine-tuning the pulse of the wine. The blend is pure character: 45% Garnacha and 55% Cariñena, from 70 to 100 year old goblet-trained vines at 350-450 m; a Priorat red wine that does not seek make-up, but precision.
Winemaking
The production of Mas Doix Doix is based on certified organic viticulture and manual harvesting with selection in the vineyard. Second selection before destemming (100%) and a rigorous third selection, berry by berry, on the cellar table. Fermentation in stainless steel tanks; after three weeks of maceration, the must is pressed and only the free-run juice, the finest part, is kept. Once malolactic fermentation is completed, the wine is transferred to barrels: 14 months of ageing in barrels, 50% new and 50% second year.
Taste
In the glass, Mas Doix Doix is deep and tense: ripe black and red fruit without easy sweetness, wrapped in slate minerality, soft smoke and mountain herbs. The entry on the palate is ample, but the nerve soon appears: lively acidity that commands the power, firm and polished tannin, and a juicy centre of plum, blackberry and an echo of spices. The finish is long, saline, stony; a wine for ageing that combines elegance and complexity, and which calls for small game, stews or rosemary lamb.
