Description

Les Terres De Philéandre was born as those "parallel plans" that, in reality, tell more truth than a main project: in 2018 David Duband allowed himself a small act of freedom, a precision négoce named after his twins, Philomène and Léandre. The first grape he bought was not just any grape: Savigny-lès-Beaune Premier Cru Aux Serpentières, a declaration of intent to explore terroirs outside his eponymous label and, incidentally, to try new avenues in cellaring. In the Côte de Beaune, Savigny can hint at rusticity if forced; Serpentières, on the other hand, usually responds with a firm elegance: warm exposed hillside and calcareous matrix soils with clays and stones, with that mineral tension that in Burgundy is not posturing, it is geology. Here Pinot Noir is more vertical than sweet, more stone than perfume... and that's why it's so appealing.

Winemaking

In Les Terres De Philéandre Savigny-Lés-Beaune Les Beaune 1er Cru Serpentières, the grapes are fermented with 70% of whole bunches, looking for nerve, freshness and the spice of the stems when ripe. Maceration lasts 15 days, with an extraction that is not shy in terms of rhythm, but rather in terms of intention: 5-7 pumpovers a day and occasional pumping-over, to build texture without disguising the origin. After pressing, the wine rests for two weeks in tank before being transferred to barrels. The ageing is 13 months in French oak(30% new barrels and 70% of 1 to 5 uses) and ends with a minimum of 3 months in tank, refining edges. Bottled without fining or filtering: if there is character, let it show.

Taste

In Les Terres De Philéandre Savigny-Lés-Beaune 1er Cru Serpentières, at first it shows a delicious Burgundian seriousness: wild strawberry, red cherry and redcurrant, a barely hinted crushed rose, and then a trace of fine pepper and undergrowth. The palate doesn't "scream" fruit: silky but taut, like silk stretched over limestone. The acidity - energetic, chalky - cleanses the palate and leaves a sensation of chalk, saltiness and sweet iron, with fine-grained, polished tannin. Long, mineral and lifted finish: more serious Savigny than sweet-toothed Pinot; a 1er Cru for those who enjoy it when the wine tightens its belt... and still invites you for another sip.
