Description

When David Duband launched Les Terres De Philéandre Aligoté in 2018, it was not out of fashion or to add labels: it was a return to curiosity. He named it after his twins, Philomène and Léandre, as if each wine were a promise of authenticity. In a Burgundy where tradition can become routine, Duband wanted to explore terroirs outside his domaine, with a clear idea: minimum intervention and maximum clarity. The cuvée is made with Aligoté, a historic Burgundian variety, often underestimated, but capable of delicious tension when the origin accompanies it. Here the origin rules: Hautes Côtes de Nuits, airy hillsides, cool continental climate and clay-limestone soils, with marl and stone that drain quickly and force the vines to go deep. The result is not a "fat" white wine: it is a white wine that walks on a rope, precise and vertical.

Winemaking

For Les Terres De Philéandre Aligoté, the grapes are harvested by hand and the selection is demanding. The grapes are brought in whole and pressed slowly with whole bunches, in order to obtain a clean must, with no green edges. Fermentation is carried out with indigenous yeasts, allowing the vineyard to set the pulse. Ageing is stretched out over 12 months on fine lees in used barrels (no new wood), to gain texture without robbing it of energy or perfume. The bottling respects this line: purity, tension and clarity.

Taste

In Les Terres De Philéandre Aligoté, the colour is pale yellow with a silvery sheen. Nose of lemon, lime and citrus peel, with a wink of white flowers and a subtle note of barely golden bread. The palate is a straightforward line: lively entry, tidy, stretching acidity, restrained fruit and a flinty minerality that tightens the finish. A fine salinity that makes you salivate and asks for another sip. An honest and sharp Aligoté from Burgundy: refreshing, serious, gastronomic wine for seafood, fish and Mediterranean cuisine.
