The unbottled 2025 Laurel White comes from a plot in Manyetes with one hectare of white grapes. This year, the blend is 70% Garnacha Blanca, 19% Chenin Blanc, 9% Viognier and a little Moscatel à Petits Grains from vines planted between 2013 and 2015. The grapes were picked in early August. The full clusters were pressed and the juice was put in 400-liter barrels and amphorae, where it matured for eight to nine months. It has more finesse and energy, and there is more Chenin in the blend this year, when is was less warm year and the grapes behaved better. For Daphne, the secret this vintage is the Chenin. She likes whites with volume, and she loves some of the whites from Châteauneuf-du-Pape. So, that's a little bit what she'd like to do here, as she feels she's still finding her way with the white. There's more complexity, nuance and finesse here, and it's young and tender but feels terribly balanced. It was about to be bottled when I tasted it. There should be around 5,000 bottles.
