Description
Grossot Chablis 1er Cru Mont de Milieu is a winemaking gem from the prestigious Premier Cru vineyards of the Grossot family, a winery that has been cultivated with dedication for three generations. Located near Fleys, on the right bank of the river Serein, this vineyard covers two thirds of a hectare on a steeply sloping south-facing hillside, bordering the renowned Grands Crus of Chablis. The vines, on average 26 years old, grow on a kimmeridgian limestone marl soil enriched with stones and marine fossils, a feature that gives a distinctive mineral character to the wines.
Winemaking
The winemaking of Grossot Chablis 1er Cru Mont de Milieu is a meticulous art: two thirds of the must ferments and matures on fine lees in stainless steel tanks, while the remaining third begins its fermentation in tank before being transferred to 228 and 600 litre oak barrels, aged between one and five years. These barrels allow the wine to finish fermentation and age with occasional batonnage until March. The different parts are then assembled in June and bottling takes place in the second January after the harvest. The process ensures that the wine retains its purity and structure, unfolding its potential with years of bottle ageing.
