Description

Grossot Chablis is a wine that accurately reflects the tradition and dedication of the Grossot family, who, for four generations, have been cultivating vineyards in the prestigious terroir of Chablis, east of the river Serein. Corinne and Jean-Pierre Grossot, together with their daughter Eve, have managed to position themselves among the elite of the appellation, combining organic farming practices with modern winemaking techniques.
The grapes for this Chablis AOC come from vineyards located in the communes of Fleys, Chichée and Fontenay, known for their well-oriented slopes and Kimmeridgian limestone soils, rich in marine fossils that bring a unique minerality to the wine. These soils allow for the optimal development of Chardonnay, the only variety that makes up this wine. The vines, some of which are more than 35 years old, are cultivated under strict organic rules, which guarantees a healthy and balanced fruit.

Winemaking

The winemaking process of Grossot Chablis is meticulous. After manual harvesting and gentle pressing, the must is slowly fermented in stainless steel tanks at low temperatures, allowing the freshness and purity of the grapes to be preserved. A key point is the malolactic fermentation, which is carried out in all vintages to give the wine a smoother and more complex texture. Ageing on fine lees for a year in stainless steel tanks accentuates its aromatic depth, and it is bottled between 12 and 18 months after the harvest.

Grossot Chablis is a wine that captivates with its perfect balance between freshness and finesse. At first sip, notes of ripe pear, hints of citrus and subtle aromas of honey stand out, complemented by a vibrant minerality that evokes its chalky origin. On the palate, it offers refreshing acidity and a lingering finish that invites further tasting. It is ideal to enjoy in its youth and also possesses remarkable ageing potential, capable of evolving elegantly in the bottle.
