The NV Antique Pedro Ximenez is produced from dehydrated Pedro Ximenez grapes in a solera system, and represents half of the production of the range. Mahogany-colored, it reveals plenty of notes of marinated balsamic herbs (somehow an old vermouth comes to mind), licorice and a fresh touch of candied apricots. The palate is fresh, sweet, with echoes of the raisins, showing medium age which makes it easier to drink. It might not be a terribly complex Pedro Ximenez but its freshness makes it very approachable. 14,000 bottles produced yearly. Drink 2013-2015.

Description

From the beginning, Fernando de Castilla Pedro Ximénez Antique was not conceived simply as a sweet wine, but as a living testimony of time and the land. Jan Pettersen, a Norwegian living in Jerez, rescued old soleras with a clear vision: to restore Pedro Ximénez to its place as a jewel of the Jerez region. The grapes, grown on white albariza soils, slowly dried in the Andalusian sun, concentrate an almost mystical intensity. There are no shortcuts here: just patience, sunshine, and an intimate connection with tradition. This "Antique" version is made exclusively with Pedro Ximénez and represents a profound and serene interpretation of the variety, with roots rooted in centuries of winemaking history in the Jerez-Xérès Sherry DO.

Winemaking

The grapes, raisined in the sun in "paseras", are gently pressed to extract a dense, dark must. Fermentation is interrupted by fortification with wine alcohol, preserving its high concentration of natural sugars (more than 400 g/L). Subsequently, Fernando de Castilla Pedro Ximénez Antique is aged for more than 20 years using the traditional solera and criaderas system, in American oak barrels. This slow oxidative process, without aggressive filtering, allows the wine to gain complexity without losing freshness, resulting in a majestic, balanced and unique PX.

Taste

Fernando de Castilla Pedro Ximénez Antique is dense, inky dark, with a tear that slowly trails down the glass. On the nose, a burst of dried figs, dates, sultanas, cane honey, coffee and toffee. It is followed by notes of liquorice, clove, bitter cocoa and an echo of candied orange. The palate is pure velvet: unctuous, enveloping, but with an unexpected acidity that avoids cloying. The sweetness is deep and elegant, never excessive. The finish is endless, with echoes of dried fruit, spices and noble wood. A wine not just to drink, but to contemplate. Ideal as a liquid meditation or with blue cheeses, chocolate desserts or simply on its own.
