The amber-colored NV Antique Palo Cortado has a clean, changing, lifted nose of white chocolate, orange marmalade, almonds and incense, while the balanced palate comes through quite intense, sharp, with good acidity and length. 3,000 bottles were filled. Drink 2013-2019.

Description
From the luminous vineyards of Jerez de la Frontera comes one of the most personal jewels of the region: Fernando de Castilla Palo Cortado Antique. It was Jan Pettersen, a wine enthusiast who left his native Norway behind, who rescued this historic bodega with a clear vision: to make wines that speak unfiltered of terroir, ageing and time. Instead of following the usual commercial path, he decided to work with old soleras, without massive blending, and to emphasise purity. This is how the Antique range came about, and in particular this Palo Cortado, made from 100% Palomino Fino from albariza soils, under the warm and windy skies of the Jerez Xérès-Sherry appellation. The uniqueness of this wine stems not only from the soil and the vine, but also from the controlled "accident" that defines every Palo Cortado: the transformation of an initially biological ageing process into an oxidative one.
Winemaking
Fernando de Castilla Palo Cortado Antique begins as a fino, aged under velo de flor. But at some point -naturally or deliberately- the veil disappears, and the wine moves towards a prolonged oxidative ageing. It is fortified up to 20 °, and aged in a single solera, without blending or refreshment with young wines. This Palo Cortado has more than 30 years of average ageing, and is bottled unfiltered, in 50 cl format, preserving every nuance.
Taste
Aromatically, Fernando de Castilla Palo Cortado Antique is a symphony of depth and clarity. Toasted hazelnut, bitter almond, orange peel, toffee and a faint saline echo intertwine with notes of mild spice, incense and a hint of fresh citrus. The palate is dry, enveloping, very fine, with silky texture and vibrant acidity. There are layers of dried fruits, noble woods, antique woodwork, and a marine and mineral, almost ethereal background. The finish is long, saline and deeply elegant, with a balance that moves rather than impresses. A wine of contemplation, made to be drunk slowly, without haste or distraction.
