Description
Fernando de Castilla has its origins in a house dating back to 1837 and a philosophy that views Jerez as a landscape, a memory and a matter of precision. Since Jan Pettersen’s time, the winery has reinforced a very clear and honest vision: to preserve tradition, work with sensitivity and let the origin speak for itself without embellishment. In Fernando de Castilla Classic Dry Manzanilla, there are no aromatic compromises or excessive artifice, only the purity of Manzanilla in its most classic form. Made from 100% Palomino Fino, this Manzanilla from Sanlúcar de Barrameda draws on the strength of the albariza soil, the influence of the Atlantic and a microclimate that is crucial for the development of the flor. This combination of white soil, sea air and winemaking culture gives rise to a dry sherry with an unmistakable profile, deeply rooted in the tradition of the Jerez appellation.
Production
For Fernando de Castilla Classic Dry Manzanilla, the grapes are pressed and the must ferments in stainless steel tanks. The wine is then fortified to 15% vol. and undergoes biological ageing under the flor. From there, the ageing process begins using the traditional criaderas and soleras system, with an average ageing period of around 3 years in American oak casks. This ageing refines the wine, dries it out, refines its profile and imbues it with saline and yeasty nuances. The result is a dry manzanilla with a clean, crisp and deeply gastronomic profile, bottled to preserve all its tension and freshness.
Taste
In the glass, Fernando de Castilla Classic Dry Manzanilla displays a brilliant straw colour with greenish highlights. The nose is delicate, dry and quintessentially Sanlúcar: fresh yeast, raw almond, a sea breeze, a hint of bread dough and a very subtle nuance of chamomile. This is not a wine of exuberant fruit, but rather one of silence, salt and edge. On the palate, it enters lightly, but immediately reveals vigour, precision and a sharp texture that sweeps across the palate with a delicate, almost iodine-like salinity. The finish, dry and barely bitter in the best sense, cleanses the palate with immense elegance. This Andalusian manzanilla is at its best when paired with seafood, fried fish, Iberian ham and savoury appetisers, where it reveals its full character as a great gastronomic wine from the Marco de Jerez.
