Description
Constantina Sotelo Octopus Albariño is a singular white wine crafted by Constantina Sotelo, a winemaker with more than three decades of experience in the Rías Baixas region of Galicia. This wine comes from two family vineyards, with vines between 30 and 50 years old, located near the Ría de Arousa, at an altitude of between 500 and 1000 metres from the sea. The grapes used for this wine are 100% Albariño, grown in granitic decomposed soils, which gives it a unique mineral profile. The grapes are harvested by hand and the winemaking process is characterised by minimal intervention.
Winemaking
Fermentation is carried out with indigenous yeasts, beginning with a prolonged maceration with the skins in clay amphorae. This method, known as amphora vinification, allows the wine to acquire complexity, with a continuous batonnage that enhances its organoleptic qualities. Malolactic fermentation occurs spontaneously, and the wine spends approximately 10 months in contact with its skins, which gives it a distinctive character.
Taste
Constantina Sotelo Octopus Albariño is a wine that surprises with its colour, a mixture of amber and pink tones, unusual for a white wine, due to the maceration with the skins. On the nose, mineral notes are perceived that evolve towards aromas of white flowers, orange peel , honey and dried apricots. On the palate, it is distinguished by its medium-high acidity, well integrated with a round and persistent finish. It is a complex wine, which can change in the glass after opening, offering a sensory experience ranging from mineral to fruity and spicy.
