Description

There are wineries that are born with a business plan and wineries that are born out of necessity. Clos des Fées belongs to the latter. Hervé Bizeul - sommelier, restaurateur and journalist - decided to leave the comfort of words behind and to get into the "doing" with an almost obstinate courage: starting with minimal means and a fixed idea, that the terroir should rule and the wine should not be disguised. This way of starting, without a net, explains his philosophy: precision before effect, tension before sweetness.

Clos des Fées Aimer, Rêver, Prier, Se Taire is also a bet against the grain: 100%Pinot Noir in the Roussillon, in IGP Côtes Catalanes, in the commune of Tautavel, lieu-dit "Cabrils". An arid, steep, north-facing hillside, with red and black clays that force the vines to go deep, and a Mediterranean climate where the northern exposure acts as a natural brake, preserving nerve and freshness. Here Pinot does not seek easy perfume: it seeks verticality, warm stone and wind.

Winemaking

At Clos des Fées Aimer, Rêver, Prier, Se Taire, the grapes are harvested relatively early to preserve acidity and balance. A short cold pre-fermentation maceration is applied and fermentation starts with indigenous yeasts, without aromatic make-up. Extraction is surgical: gentle punch-downs and moderate pump-overs, just enough to draw out texture without hardening the tannin. The wine is then aged for 8-10 months in Burgundy barrels, where the wood appears as a frame, not as the protagonist, and bottled with minimal intervention to maintain the pulse of the vineyard.

Taste

Clos des Fées Aimer, Rêver, Prier, Se Taire in the glass is bright ruby, translucent, with inner light. The nose is complex and restrained: ripe but crunchy red fruit, a noble herbaceous nuance, almost undergrowth, and a dark blackberry background. With air, raspberry coulis, morello cherry and a touch of very fine oak, more of spice than vanilla.

The palate is the best: dense and full-bodied, powerful without being heavy. The fruit is tightened by a sharp freshness; the tannins are present, but with a very fine grain. The finish is long, smoky and mineral, with bitter cherry and a seriousness that promises good evolution.
