The 2018 Icònic is a classical Mediterranean sparkling Cava, a blend of 37% Parellada, 35% Macabeo and 28% Xarel.lo from vines over 20 years of age. It matured for no less than six years in bottle and is sold as brut nature. In reality, Icònic is the new name for their old Gran Reserva Brut Nature, which never had a proper name. It has a nuanced and elegant nose and a fresh and lightish palate. 80,000 bottles produced.

Description
In the heart of the Penedès, where the sea breeze filters through old vines and limestone soils, Celler Kripta goes one step further. This is how Kripta Icònic was born, a Corpinnat Brut Nature that pays homage to time and terroir without concessions. The native Macabeu ( 35%), Xarel.lo (28%) and Parellada (37%) varieties are harvested by hand, following organic principles, and vinified separately with their own selected yeasts before the harvest.
Winemaking
Celler Kripta Icònic Gran Reserva undergoes its second fermentation in the bottle and rests for six years on its lees, in the dark and at a constant temperature. No added sugar, no make-up. At the optimum moment, it is stripped of its lees and receives its final cork. A vegan, honest sparkling wine that expresses depth without losing precision.
Taste
Celler Kripta Icònic Gran Reserva does not impose itself, it seduces with subtlety. The nose displays ripe white fruit, baked apple, lemon peel, toasted bread and a delicate background of dried fruit. The very fine bubbles are integrated with a precise creaminess. The palate is vertical, fresh and persistent, with notes of candied citrus, sourdough and a saline minerality that anchors it to the landscape. The finish is dry, long, almost meditative.
Perfect with Asian cuisine, oily fish or white meats, but also to drink on its own, in silence, letting time do the talking. A long-aged sparkling wine that, like few others, honours its name.
