The 2021 Franc was produced with 50% Macabeo, 30% Parellada and 20% Xarel.lo, a recurrent blend here, aged for three years in bottle and adjusted to six grams of sugar, so a brut. It has a textbook Cava nose, with notes of aromatic herbs and even a touch of camphor, and a light and fresh palate, sharp, with the sugar balancing the acidity. This is an evolution of the Brut Reserva. 350,000 bottles produced. The bottle I tasted was disgorged in March 2025, a couple of weeks before I tasted it.

Description
Celler Kripta Franc Brut Reserva is a cava that stands out for its elegance and complexity. Produced by the Agustí Torelló Mata winery, it is made from a blend of the typical Penedès grape varieties: 45% Macabeo, 30% Parellada and 25% Xarel-lo.
Winemaking
Fermentation is carried out in small stainless steel tanks, followed by a second fermentation in the bottle and an ageing process of 48 months. This Brut cava, which contains 12 grams of sugar per litre, offers a unique experience thanks to its careful elaboration and prolonged ageing.
Taste
Celler Kripta Franc Brut Reserva impresses with its fine, persistent bubbles. On the nose, fresh aromas of green apple, peach and nectarine, intertwined with subtle hints of bakery. On the palate, its creamy texture caresses the palate, revealing a perfect balance between acidity and smoothness. The bubbles dance on a long and pleasant finish, providing an elegant and refreshing tasting experience.
