Description
In Sant Joan de Mediona, at an altitude of 500 metres above sea level, where the mountain imposes its rules and slate dominates the subsoil, this singular Trepat is born. From the Ubac estate, in an area of extreme viticulture, Celler Kripta Trepat Brut Reserva is the result of a challenging harvest: the drought pushed the vines to the limit, and that tension was imprinted on each cluster. Small, concentrated grapes that intensely express the character of their origin. The winery's philosophy -ecological, artisanal, uncompromising- is reflected in every decision: manual harvesting, own yeasts and vegetable-based fining agents, with a profound respect for the environment and the grape variety.
Winemaking
The production of Celler Kripta Trepat Brut Reserva begins with an 8-hour maceration to extract colour and character. The must ferments slowly for 28 days at 16 °C with selected yeasts before the harvest, in order to achieve maximum varietal purity. Subsequently, it undergoes a second fermentation in the bottle and is aged for 18 months on the lees, in the darkness of the cellars, at natural temperature. Disgorgement is carried out on demand, indicating the exact date on each bottle and adding an expedition liqueur with 8 g/l of sugar(Brut), as a seal of authenticity.
Taste
Celler Kripta Trepat Brut Reserva has a clean, bright cherry colour. On the nose, it is expressive, with aromas of ripe raspberry, sour cherry and a subtle note of scrubland and fresh thyme, so typical of Trepat. On the palate, the bubbles are fine, lively and perfectly integrated. Surprisingly crisp freshness and balance between juicy fruit and a slightly herbal and saline background. Persistent, elegant, with that dry, mineral finish that anchors the wine to its land. A mountain sparkling wine with an athletic soul, authentic and without artifice, ideal for those who are looking for a rosé Cava with a serious, expressive profile, deeply linked to its origin.
