The 2024 Chivo Tinto is the red produced with grapes from younger vines, mostly Listán negro from the south but also small amounts of other grapes like Verijadiego Negro and Baboso Negro and from other parts of the island. Most of the island is planted with white grapes— reds are quite marginal—but in 2024, they got good yields. It's pale, fresh and floral, with some meaty notes, a hint of gunpowder and bright red berry fruit aromas. Here, the destemmed grapes fermented with indigenous yeasts in open bins, and the wine matured in stainless steel with the lees for nine months. It has contained ripeness and 12% alcohol, much lower than in 2023, a pH of 3.6 and 5.3 grams of acidity, with a medium-bodied palate with fine, somewhat chalky tannins. 1,700 bottles were filled in June 2025.

Description

On the island of El Hierro - a rugged, pure and deeply identifying territory - his project rescues autochthonous varieties and forgotten agricultural memories. Bimbache Chivo Tinto is not just a wine: it is a tribute to the rural celebrations of yesteryear, where red wine and goat meat marked the moments of festivity.
Bimbache Chivo Tinto is born from a free blend: Listán Negro, Vijariego Negro, Baboso Negro and other local grapes, red and white, grown in vineyards between 20 and 40 years old on volcanic soils, between 100 and 1,000 metres above sea level. The diversity of altitudes and exposures provides layers of freshness, tension and mineral expression.
Winemaking
Bimbache Chivo Tinto is made without make-up, respecting the character of the fruit. The grapes are destemmed and fermented spontaneously. The wine is aged for 9 months in stainless steel tanks with its lees, without oak ageing. In June it is bottled without fining or filtering. Everything is done under an ecological approach and with minimum intervention.
Taste
Bimbache Chivo Tinto is a wine of deceptive lightness. Subtle aromas of pomegranate, fresh cherry and raspberry mingle with herbal notes (fennel, thyme) and a mineral undertone of volcanic stone. The palate is juicy, linear and lively, with a vibrant acidity that makes it refreshing and very gastronomic. The finish, dry and slightly spicy, leaves a saline trail that evokes the sea and the rock. A wine without artifice, raw, pure and deeply Atlantic.
