The 2024 Bimbache Blanco is the white that represents El Hierro Island. It's a blend of Verijadiego Blanco, Listán Blanco, Bremajuelo, Verdello, Malvasía and Uval grapes from different plots in different places, altitudes and expositions. The full clusters were pressed and the juice let to settle and fermented with indigenous yeasts in stainless steel and used barrels where it was kept with the lees for nine months. It has a nose of gunpowder and grounded stones and is mineral, volcanic and pungent. It has a medium-bodied palate and a long, dry and salty finish. It has a contained 12% alcohol (2023 was 14%!) and good freshness and acidity, pH 3.31 and 5.9 grams of acidity. It feels balanced and harmonious. 3,300 bottles produced. It was bottled in June 2025.

Description
Bimbache Blanco is a white wine that comes mainly from vineyards located in the north and northeast of the island of El Hierro. This wine is characterised by its diversity of varieties, which include Verijadiego Blanco (also known as Diego in El Hierro), Listán Blanco, Babosa Blanco, Gual and Pedro Ximénez, among others.
Elaboration
The grapes are harvested by hand and, after a gentle whole bunch pressing, the wine is fermented with indigenous yeasts in stainless steel tanks. Subsequently, it is aged in stainless steel, Stockinger foudres and some French oak barrels with the presence of velo flor.
Taste
Bimbache Blanco is a true representation of the island of El Hierro. It has a pale yellow colour, bright and clear, despite not having been subjected to clarification or filtration processes. Its aroma is initially intense and concentrated, with notes of citrus, such as salted lemon, lime and grapefruit peel, accompanied by a herbaceous nuance, evoking fennel and laurel. On the palate, despite its clear, almost cold acidity, it has a silky start. The wine, with an alcohol content of 13%, feels light and agile. As it is tasted, smoky and mineral notes can be identified, reflecting its volcanic origin.
