The new 2023 Cruz del Calvario Non Plus Ultra was produced with grapes from different parts of the island, with a multitude of grapes—Verijadiego Blanco, Listán Blanco, Uval, Baboso Blanco, Verdello and others. It fermented with indigenous yeasts and matured with the lees for 18 months in stainless steel and used barriques. 2023 was a warm year, and the wine comes in with 13.5% alcohol, mellow acidity, a pH of 3.48 and 5.4 grams of acidity. They selected the best barrels from different vineyards in 2023, and the wine was kept in barrel and stainless steel for one more year. It feels riper and warmer, more polished and with integrated, tender acidity. 1,550 bottles produced. It was bottled in May 2025.
