Description

Since 1984, the Berthet-Bondet family has been making wines that are a true reflection of the Jura terroir. Jean and Chantal, former scientists, have been committed to viticulture at Château Chalon, re-evaluating traditional practices with an ecological approach. Today, their daughter Hélène continues this work, guided by the same principles: respect for the land, organic farming and minimal intervention. Berthet Bondet Côtes du Jura Tradition comes from Savagnin and Chardonnay vines over 30 years old, grown on gravel and marl soils. The continental climate - cold, austere and bright - is imprinted on each cluster, giving the wine a mineral tension and a restrained character, far from complacent.

Winemaking

After being harvested by hand, the grapes for Berthet Bondet Côtes du Jura Tradition are pressed whole and fermented in stainless steel tanks. The wine is then aged for two years in 228-litre oak barrels, unfilled, under a natural yeast veil. This ancestral method, typical of the Jura, brings controlled oxidation and a complexity that can only be achieved with time and patience. The aim is not to mask, but to reveal the essence of the wine through the rest, the wood and the action of the veil. The result is a wine with an exceptional ageing potential - up to 30 years - and a profound identity.

Taste

On the nose, Berthet Bondet Côtes du Jura Tradition reveals aromas of walnut, dried apple, beeswax, mild curry and saline, almost marine notes. The palate is dry, firm, with vibrant acidity supporting flavours of dried fruit, bitter almond, hot stone and light hints of spice. The finish is long, saline and lingering, with a noble rusticity. It is not a complacent or easy wine: it demands attention, time and a trained palate. Perfect with cured comté, mushroom dishes, smoked fish or spicy cuisine.
