Description

In the heart of the Jura, Domaine Berthet Bondet has set out to reinterpret the classic vin de paille with a contemporary sensibility and absolute respect for the environment. The winery, which has become a benchmark in the Côtes du Jura, has been working in organic farming for years, convinced that the terroir - marl soil, cool climate and ideal exposure - speaks louder when it is allowed to express itself without make-up. The vines, about 15 years old, are cultivated with cover crops in every second row, and the soil is worked by hand to encourage biodiversity. Berthet Bondet Vin de Paille is the result of a bold gesture: selecting the healthiest Chardonnay, Savagnin and Poulsard grapes, drying them on spruce mats for 3 to 4 months, and thus concentrating their essence in a deep, age-worthy wine, full of identity.

Winemaking

The grapes are carefully harvested by hand. Once dry, the grapes are slowly pressed to obtain a rich must, which ferments calmly. The ageing of Berthet Bondet Vin de Paille is divided into two phases: first 18 months in oak barrels, which add texture and complexity, and then a further 18 months in stainless steel, where the wine is refined without losing freshness. The process is long, demanding and totally artisanal, designed for wines that will evolve for decades (estimated ageing is up to 20 years).

Taste

Deep golden in the glass, Berthet Bondet Bondet Vin de Paille offers an enveloping nose of honey, dried apricot, cherries in liqueur, candied orange peel and dried fruits. The palate is dense but balanced, sweet without being cloying, supported by a lively acidity that keeps it agile. Notes of walnut, dried fig, caramel and a fine mineral salinity emerge. The finish is lingering, with echoes of sweet spice and bitter citrus. A meditative wine, ideal with foie gras, blue cheeses or dark chocolate. Complex, elegant, authentic Jura.
