Description
The world of champagne is vast and diverse, but there are names that stand out for their tradition and quality. One such name is André Beaufort, a winery that has managed to combine tradition with modern techniques to offer exceptional champagnes. One of its star products is the Polisy Brut Réserve.
This champagne comes from the Aube region, in the Côte des Bars. It is made mainly from PinotNoir ( 80%) and Chardonnay (20%) grapes. These grapes are grown on clay soils and treated organically, using homeopathic products and even aromatherapy.
Winemaking
The elaboration of this champagne is a reflection of the dedication and care that André Beaufort puts into each bottle. After manual harvesting, the grapes are pressed and the must is decanted for 12 hours in special containers. Spontaneous fermentation takes place in steel tanks and wooden barrels. To avoid the use of large quantities of sulphur dioxide, a spontaneous malolactic fermentation is carried out. The second fermentation, following the champenoise method, takes place in the bottle, where the wine remains on the lees for 24 months.
