Description
André Beaufort is one of the pioneers of organic viticulture in the Champagne region, starting in 1971. André Beaufort Polisy Réserve Brut Nature, made from 80% Pinot Noir and 20% Chardonnay, comes from vineyards located in Polisy, in the Côte des Bar, an area characterised by clay soils and the influence of the cold climate of the Langres plateau. The vineyards are farmed organically, using homeopathic and aromatherapy techniques to combat vine diseases, minimising the use of copper and sulphur.
Winemaking
The grapes are harvested by hand, and the grapes are immediately pressed. The must is decanted for 12 hours before undergoing spontaneous fermentation in steel tanks and wooden barrels. The second fermentation in the bottle follows the champenoise method, remaining on the lees for at least 24 months. Disgorgement is carried out manually"à la volée", which allows greater control over the development of the wine, and without final dosage (Brut Nature).
Taste
André Beaufort Polisy Réserve Brut Nature stands out for its minerality and freshness. On the nose, it offers aromas of red fruit and citrus, with a subtle toasted touch. On the palate, the persistent bubbles and well-marked acidity create a sensation of freshness, leaving a long finish. The balance between the creaminess of the Pinot Noir and the freshness of the Chardonnay makes it a vibrant and structured choice.
