Description
Andreas Tscheppe Hirschkäfer, produced in the vineyards of Elisabeth and Andreas Tscheppe, is the result of a meticulous selection of grapes and a winemaking process that respects both tradition and innovation. The vines that give life to this wine are between 7 and 35 years old, rooted in soils composed of limestone clays, which give unique characteristics to the final product.
Winemaking
Andreas Tscheppe Hirschkäfer is made from 60% Sauvignon Blanc and 40% Chardonnay. These grapes are harvested by hand and fermented in old 600-litre barrels between 10 and 19 years old. The vinification process is particularly interesting: the grapes ferment spontaneously in whole cluster with their skins for 5 weeks. During this time, the wine is racked twice. Subsequently, it is aged in the same barrels for 18 months. At the time of bottling, it is unfiltered, unclarified and without the addition of sulphur, which guarantees an authentic product true to its origin.
Taste
Andreas Tscheppe Hirschkäfer unfolds a range of sensations on the palate. It is absolutely delicious, with a mouth-warming acidity that bursts with flavour. The aroma is complex, with notes of yeast and sweet apple compote. Tropical notes and hints of almost dried grass are also discernible. But what really stands out is its finish: perfectly long and rounded, it is one of those wines that you simply want to keep drinking again and again.
