Description
Andreas Tscheppe Salamander is a wine originating from vineyards aged between 6 and 12 years. The vines benefit from a chalky clay soil, which gives unique characteristics to the fruit. Furthermore, it is important to note that these vineyards are owned by the winery and organically farmed by Andreas himself.
Winemaking
The grape variety used for this wine is Chardonnay in its entirety. The meticulous winemaking process begins with the manual harvesting of the grapes, followed by destemming. They are then pressed and transferred to neutral barrels of different capacities: 300, 1,800 and 2,000 litres, some of which are up to 12 years old. In these barrels, the wine ferments spontaneously, without any intervention to alter its natural process. During its ageing, which lasts 18 months, the wine is racked three times, thus ensuring its clarity and purity. Finally, it is bottled unfiltered, unclarified and without the addition of sulphur, respecting its essence and authentic character.
Taste
Andreas Tscheppe Salamander presents itself on the palate with a medium body and medium-high acidity for freshness. Its dry profile is complemented by a rich and varied aromatic and taste palette. Notes of butter, lemon, lime and yellow apple intertwine with hints of caramel, honeysuckle, smoke and crushed gravel. This combination of flavours and aromas makes it a complex, balanced wine with an unmistakable personality, a reflection of the care and love with which it has been made.
