The same as the rest of the extremely old wines, this new 'Saca 1/2017' bottling of the NV Amontillado Viejísimo Solera Fundación is a wine whose only problem is being next to the Palo Cortado Abuelo Diego. It somehow does not achieve the same finesse and elegance and in comparison feels a little more rustic but is super intense and powerful with pungent, penetrating and persistent flavors and telltale notes of varnish, hazelnuts, rusty nail, low tide, sea breeze, brine, iodine and saltpeter. 318 half bottles were filled in January 2017.

Description

Alvear Amontillado Solera Fundación is an exceptional wine, representative of Andalusia's winemaking tradition. This wine is a single varietal, made from 100% Pedro Ximénez grapes, whose historical origins date back to the Rhine River in Germany. The grapes come from vineyards owned by the Alvear family, located in the famous vineyards of Sierra de Montilla, Moriles and Las Puentes, all planted before 1990.
Viticulture is carried out in the main vineyard of the Alvear family estate, ensuring that the grapes arrive in optimum condition at the processing facilities. The soils of these vineyards are albariza soils, rich in calcium carbonate and composed mainly of marl, a type of soil made up mostly of limestone and mud. These soils, poor in organic matter and of simple mineral composition, have a high water retention capacity, which significantly influences the development of the vines' roots.

Elaboration

In terms of winemaking and ageing, it is estimated that the Alvear Amontillado Solera Fundación has been aged for more than 50 years. The traditional vinification of the wine was carried out with indigenous yeasts. The ageing process is carried out using the criaderas and soleras system, with two full levels in the fino style and one level as amontillado. This amontillado is produced from the most original and authentic form of ageing, starting as a fino and, over time, moving to oxidative ageing typical of amontillado, which concentrates the colour, aromatics, flavour and alcohol.

Taste

Alvear Amontillado Solera Fundación has a deep amber colour. On the nose, it has a pronounced intensity with aromas of fine wood, varnish, dried fruits, caramel, spices, balsamic, floral notes and coffee. The palate is dry, with high acidity and a high alcohol content (20%). The intensity of the flavours is medium-high, reflecting the aromas perceived on the nose. The finish is long, with a saline and bitter touch. Although less concentrated and sharp than other wines, it stands out for its exceptional elegance.
