The NV Fino C.B. is the European brand for the wine sold in the United States as Alvear Fino, produced from Pedro Ximenez grapes aged under flor for an average of five years, and is not fortified, something common in Montilla. Straw-colored, it has an intense, clean, aromatic nose of salted almonds, olives and brine, denoting a good balance between freshness and pungency. Clean, vibrant and tasty, it has a salty-bitter finish. 500,000 bottles are produced annually. Drink 2013-2014.

Description

Alvear Fino CB, a fine wine from the Montilla-Moriles appellation, is a tribute to Carlos Billanueva, the first foreman of Bodegas Alvear. This wine is distinguished by the fact that it is made from 100% Pedro Ximénez grapes, a variety known for its high sugar concentration. The remarkable thing about this fino is that, unlike others, it has not been fortified during its production process, a unique feature given the natural richness in sugars of the Pedro Ximénez grape.

Elaboration

As for its elaboration and ageing, Alvear Fino CB undergoes a biological ageing process under a veil of flor for more than four years. This process is carried out in American oak casks, using the traditional system of criaderas and soleras with periodic sacas. This ageing method contributes significantly to the wine's unique characteristics.

Taste

Alvear Fino CB has a straw yellow colour with some golden glints. The nose has good intensity with aromas reminiscent of flowers, dried fruits, almonds, olives, breadcrumbs and yeast, all of which provide remarkable intensity and definition. On the palate, it is dry and sharp, but at the same time, it offers freshness and a certain fruitiness. It is notably saline, with hints of herbs, dried fruits and yeasts, culminating in a long and intense finish.
This fino is ideal to be enjoyed as an aperitif, accompanied by olives, salted almonds, or even with sushi, highlighting its versatility and the richness of its flavours. Its elegance and lightness make it a perfect accompaniment to a variety of dishes, enhancing the gastronomic experience.
