I wasn't aware of the price or age of the NV Palo Cortado Viejísimo Abuelo Diego when I first encountered it but I was really blown away by it. There is now a new 'Saca 1/2017' of only 318 half bottles, only the second bottling ever, with incredible concentration, dry extract and power. It's a bright copper color with a captivating nose truly nuanced and insinuating, with some traces of a past as an Amontillado that has also developed aromas and flavors that make you think of an Oloroso. There are hints of low tide, rusty nails and saltpeter that are often found in very old wines like this that go beyond the varietal (yes, this was produced by Pedro Ximénez) and the palate shows great finesse and balance, with everything perfectly integrated. I suppose this was never fortified and it just achieved its unnoticeable 19.5% alcohol by sheer concentration. Exceptional.

Alvear Palo Cortado Viejísimo Abuelo Diego comes from very distinctive soils that play a crucial role in the uniqueness of this wine. These soils are known as albariza, a very special type of soil found in the Montilla-Moriles region, where Bodegas Alvear's vineyards are located.
Albariza soils are rich in calcium carbonate and are mainly composed of marl, a mixture of limestone and clay. This composition gives them a soft and crumbly texture. These soils are poor in organic matter and have a simple mineral composition, which makes them relatively infertile. However, this infertility is one of the reasons why grapes grown in these soils can develop such exceptional concentration and complexity of flavours.

Winemaking

Alvear Palo Cortado Viejísimo Abuelo Diego begins with 10 years of biological ageing, followed by 30 to 40 years of oxidative ageing. This long ageing gives the wine a depth and complexity of flavours that make it unique. The Alvear Palo Cortado Viejísimo Abuelo Diego is an "amontillado torcido", a special category within Jerez wines, characterised by its ageing process that combines both biological and oxidative ageing.

Taste

Alvear Palo Cortado Viejísimo Abuelo Diego is truly elegant and complex. It presents balsamic notes, which are intertwined with aromas of flowers and dried fruits. One of the highlights of this wine is its subtle salinity, which reflects the characteristics of the albariza soil in which the grapes are grown. This soil, typical of the Jerez region, is known for its ability to retain moisture and contribute to the uniqueness of the wines of the area.
