This captivating white wine is born in the heart of the Pouilly Fuissé AOC, in the villages of Fuissé, Solutré, Vergisson and Pouilly, where the Chardonnay has learned to speak with the clay-limestone soils, full of pebbles and history. The old vines, more than 45 years old, are rooted in a wise soil, which has seen generations and vintages pass by, and which now expresses itself with unequalled depth.
Winemaking
Vincent Giró 's philosophy has always revolved around respect: for the vineyard, for the environment and for natural rhythms. The grapes are harvested by hand with an almost poetic precision to preserve the identity of each berry. Fermentation - spontaneous, without additives or haste - takes place in 500-litre French oak barrels (only 10% new), where the wine rests for ten months on its fine lees, without bâtonnage, breathing slowly. The whole process, right up to bottling according to the lunar calendar, is imbued with a clear intention: to let the Burgundy terroir speak clearly and express itself with all its authenticity in each bottle of Vincent Girardin Pouilly Fuissé Vieilles Vignes.
