Description
From the heart of the Penedès, Rimarts makes cavas that combine artisanal soul and contemporary precision. In the 1980s, Ricard Martínez broke with the dictates of mass production and decided to create sparkling wines that spoke of time and the land, not the market. Thus was born Rimarts 40 Gran Reserva, a Cava that embodies the courage to wait. The family says that, after a difficult harvest, Ricard opted for long ageing despite the low yield. The result: a complex, vibrant and deep sparkling wine. The blend brings together the traditional Cava varieties - Macabeo, Xarel.lo and Parellada - together with a touch of Chardonnay, all grown on calcareous soils under the influence of the Mediterranean climate, which brings freshness and balance.
Winemaking
Rimarts 40 Gran Reserva is made according to the traditional method, where each variety is fermented separately in stainless steel to preserve its varietal expression. The base wine is carefully blended and undergoes a second fermentation in the bottle, where it remains for a minimum of 40 months on the lees. Disgorgement is carried out manually and without expedition liqueur, keeping it in its purest version: Brut Nature. The disgorging date is indicated on each label, reflecting transparency and commitment to the artisanal quality that defines Rimarts 40 Gran Reserva.
Taste
Rimarts 40 Gran Reserva has a golden yellow colour with fine, constant bubbles. The nose offers notes of baked apple, almond, brioche and dried flowers, with subtle echoes of fine yeast. The palate is dry, creamy and elegant, with perfectly integrated carbonation. The acidity is precise, refreshing, and sustains a long passage, with hints of toast, ripe citrus and walnut. The finish is persistent, with a saline and elegant aftertaste that leaves its mark. Ideal to accompany seafood, baked poultry or simply to celebrate the authenticity of a Cava like Rimarts 40 Gran Reserva, which does not seek to please everyone, but to seduce those who appreciate the truth of time.
