Description
At Fontanars dels Alforins, in the Valencian hinterland, Rafael Cambra has crafted this Valencian white wine as a statement of simplicity and terroir rather than as a contrived white. His project was born from that very personal idea of intervening as little as possible and listening closely to the vineyard: working as an ‘intern’ of the land, not as its owner, to let the landscape speak for itself. The winery began in 2001 in a former fruit warehouse in Ontinyent and later moved to Fontanars, closer to the vineyards that give meaning to the project. There, at an altitude of around 700 metres, on clay-limestone soils, dry-farmed and organically cultivated, the Mediterranean climate is tempered by cooler nights, comparatively cold winters and constant breezes; this combination givesRafael Cambra Soplo Blanco vigour, structure and a freshness unexpected for the area. The wine is based on Viura and Malvasía, with separate harvests for each variety.
Production
The grapes for Rafael Cambra Soplo Blanco come from a dry-farmed vineyard in Fontanars and are harvested by hand into large crates; the Viura is harvested a week before the Malvasía to preserve tension and aromatic precision. This is followed by gentle direct pressing in a pneumatic press, and fermentation begins in stainless steel tanks with indigenous yeasts at 16°C for 21 days. The wine is aged in stainless steel on its own lees, seeking volume without losing its edge. Bottling takes place after gentle filtration with a low sulphur addition.
Taste
In the glass, it does not play on tropical exuberance or floral notes. Rafael Cambra Soplo Blanco takes a different path: first, white flowers, hawthorn and a very delicate hint of hazelnut emerge; then taut citrus, crisp white fruit and a hint of barely ripe peach appear. On the palate, it is direct, fresh and agile, with an acidity that sharpens the profile without making it thin. There is a subtly creamy texture from the lees, but the overall impression remains dry, clean and vibrant. The finish leaves a slightly salty, herbal and chalky impression, very much of high-altitude vineyards and poor soil: a Mediterranean white wine, serious and extraordinarily drinkable.
