Description
Philippe Brand Retenez Son Nom Sous Voile is an exceptionally distinctive white wine from Philippe Brand, made from 100% Sylvaner grape variety. This wine comes from vineyards located in Ergersheim, in the Alsace region of France, planted on clay-limestone soils, which gives a unique mineral structure to the wine. The vines, which are on average 55 years old, are cultivated according to the principles of biodynamic agriculture, which guarantees a viticulture that respects the environment and biodiversity.
Winemaking
The winemaking process of Philippe Brand Retenez Son Nom Sous Voile is unique. After a gentle pressing, the wine ferments for 30 months using indigenous yeasts and develops a subtle veil of flor (a thin layer of yeasts floating on the surface of the wine). The wine is then aged for a further 30 months in oak vats. The process is inspired by Jura winemaking techniques, leaving the wine in contact with oxygen, but protected by the flor, which gives it a controlled oxidative character. In addition, no sulphites are added and the wine is not filtered before bottling, thus maintaining its purity and natural character.
Taste
Philippe Brand Retenez Son Nom Sous Voile has a remarkable complexity, with flavours of nuts, ripe apples and a touch of honey. These notes are complemented by a subtle oxidative profile, which brings additional depth without overpowering the freshness of the wine. It is characterised by high acidity, which balances its medium body and makes it ideal to accompany cured cheeses, fish and white meats.
