Description
In Burgundy, Pinot Noir isn’t ‘made’: it’s coaxed. And Maxime Cheurlin-Noëllat, who took the reins of the historic Domaine Georges Noëllat at just over 20 years of age, decided that his hallmark would be precision rather than power. His vision for this Bourgogne Hautes Côtes de Nuits stems from looking upwards: to the cooler slopes, where ripening takes its time and the minerality of the limestone reigns supreme. He works with a winegrower’s mindset — living soil, minimal intervention — and with a rare boldness: slowing everything down, letting the wine express itself without pushing it. The variety is 100% Pinot Noir and the origin, at Altura, is in the Leully sector, with a south-facing aspect and a limestone terroir that imparts that touch of cool chalk and elegant dryness so typical of Burgundy.
Production
The grapes are harvested by hand and handled with care, seeking infusion rather than extraction: this is how the ethereal profile of Maxime Cheurlin Noëllat Hautes Côtes de Nuits Rouge is born. It ferments with indigenous yeasts, and a small proportion (approx. 10%) is left whole-bunch to add energy, vigour and a subtle spicy nuance. Ageing takes place in barrels, with a measured use of new oak (approx. 33%), and the wine is bottled without fining or filtering, to preserve texture and authenticity.
Taste
On the nose, it doesn’t shout: it is subtle, and Maxime Cheurlin Noëllat Hautes Côtes de Nuits Rouge operates in the realm of nuance. Tart cherry, red raspberry and a base of fresh earth and rubbed stone; with a breath of air comes a dry floral echo (rose/violet) and a touch of fine spice. On the palate it is straightforward and juicy, with acidity that sharpens the mid-palate and chalky tannins: creamy, yet with grip. The fruit remains restrained (cherry, a hint of redcurrant), and the finish leaves a mineral, slightly smoky trail that calls for food: roast poultry, mushrooms, or oily fish with a mild sauce.
