Description
The Chablis Grand Cru Preuses de Louis Jadot cuvée was born as a tribute to one of the most unique climates in northern Burgundy. The maison, founded in 1859, was committed to producing a Chardonnay that would not only respect the terroir, but also amplify it. The Preuses plot, one of the seven authorised as Grand Cru in Chablis, is planted on Jurassic marl and limestone soils, on an east-facing slope, bathed in morning light and lashed by spring frosts. Here, viticulture is almost an act of faith: harvesting is done by hand in the early hours of the day to preserve the acidity and purity of the fruit. This wine is 100% Chardonnay, grown in a cold continental climate that gives tension, austerity and minerality to each cluster.
Winemaking
After a gentle pressing, the must of Louis Jadot Chablis Grand Cru Preuses is split: one part ferments and ages in 456-litre oak barrels, the other remains in stainless steel tanks. This dual approach preserves the wine's edge and precision, while adding texture and structure. The ageing, between 13 and 15 months on fine lees, adds complexity without detracting from the freshness. Partial malolactic fermentation takes place, achieving a balance between tension and roundness.
Taste
In the glass, Louis Jadot Chablis Grand Cru Preuses has a pale colour with greenish reflections. The nose is precise: green apple skin, lime, white flowers and wet stone, with a slightly creamy background. On the palate, it is direct and vertical: the acidity is sharp, the texture saline, with notes of grapefruit, red apple and a slight hint of raw honey. The mineral profile dominates: limestone, sea salt, almost electric tension. The finish is long, saline, and leaves a sensation of crystalline purity.
A sober, elegant wine, without artifice. Ideal for pairing with ceviche, raw seafood, delicate vegetable cuisine or Asian-inspired dishes. It is a white wine that speaks softly, but with a clarity that only great wines know how to sustain.
