Description
The history of this cuvée begins with Maison Louis Jadot, founded in 1859 in Beaune, whose guiding principle has always been the same: to faithfully express the character of each Burgundian terroir. Louis Jadot Bourgogne Couvent des Jacobins Blanc is born of this philosophy, with 100% Chardonnay grapes from selected vineyards in the Côte Chalonnaise and the Mâconnais, regions of southern Burgundy known for clay-limestone soils and moderate climates that favour freshness and balanced ripening. This cuvée pays homage to a former Dominican convent - the Couvent des Jacobins - and seeks to offer an accessible yet precise interpretation of Burgundian Chardonnay. Years ago, when the market was pushing for more gourmand whites, the Jadot team decided to maintain a line of purity and balance, using oak sparingly and prioritising freshness. A decision that, over time, has proved to be the right one.
Winemaking
The vinification of Louis Jadot Bourgogne Couvent des Jacobins Blanc takes place in the Givry winery, close to the vineyards of origin. Here, the grapes are fermented partly in stainless steel, to preserve fresh, crisp aromas, and partly in French oak barrels made by the house's own cooperage, seeking structure and complexity. After fermentation, the wine is aged for 8 to 10 months in a combination of stainless steel and wood before blending and bottling. This hybrid process allows the liveliness of the Chardonnay to be maintained while giving it an enveloping texture.
Taste
In the glass, Louis Jadot Bourgogne Couvent des Jacobins Blanc has a pale golden hue. The nose is precise, with notes of ripe pear, green apple and white peach, enveloped by a light citrus background (grapefruit, lemon zest) and a subtle toasted nuance. The palate shows good balance: fresh entry, well-integrated acidity, medium body and a slightly creamy texture. Hints of stone fruit, a touch of hazelnut and a clean finish, with a discreet and persistent salinity. A straightforward, elegant and gastronomic Chardonnay from Burgundy, perfect for vegetable dishes, fresh fish or sushi.
