Description
The Louis Jadot winery, founded in 1859, is synonymous with tradition and Burgundian precision. Their foray into Volnay was no accident: seduced by the reputation of their elegant reds, they acquired plots of land on east and southeast-facing slopes, where the soils - a mix of Jurassic limestone marl and calcareous-clay debris - lend finesse, tension and finesse to the Pinot Noir. In a region with no Grand Cru but 26 Premiers Crus, Louis Jadot decided to make a wine that would express Volnay's most sober and pure identity without embellishment. "We don't want this pinot to shout", said one of the winemakers of the maison, opting for a style of mineral whisper and discreet perfume.
Winemaking
After a rigorous manual selection and destemming, the grapes destined for Louis Jadot Volnay are macerated in open wooden or stainless steel vats for 3to 4 weeks. During this period, a traditional fermentation is carried out with two pigeages per day, extracting silky tannins and aromatic depth without forcing the structure. The wine then rests for 18 months in oak barrels, with approximately one third new wood, adding complexity without overshadowing the character of the vineyard. Ageing is geared towards precision and preserving the natural energy of the Pinot Noir.
Taste
Translucent ruby in colour, Louis Jadot Volnay opens with a perfume of sour cherry, wild raspberry and dried flowers. On the palate, it is smooth, medium-bodied, with perfectly integrated fine tannins. Refreshing acidity gives impetus to flavours of cherry, damp earth, subtle spices (clove, cinnamon) and a mineral background reminiscent of wet stone. The finish is long, restrained, with echoes of truffle and tea leaf. Ideal with white meats, roast poultry or classic dishes such as bœuf bourguignon. A pure, precise and absolutely Burgundian Volnay.
